This is an elegant, rich Cabernet that evokes the best of the Napa Valley and specifically the Spring Mountain District. Seductive and complex, the inviting aromas mix mountain berries, plums, and cedar with a hint of dusty earth. A smooth entry reveals a graceful and luscious wine of medium size and weight. On the palate, flavors of red currant, plum, dried spice and cocoa powder seamlessly flow together. Soft tannins shape the wine into an elegant and sublime whole that mellows nicely on the finish.

Vineyard Notes
Corbett Vineyard is located in the mountains of St. Helena in the Spring Mountain district. This rocky, steeply terraced vineyard sits 1,000 feet above the Napa Valley floor. The fruit is dry-farmed which creates intense flavor and body.
Production Notes
The 2010 growing season was cool and long in California. As winemaker Jesse Inman states, “The cool, late 2010 growing season gave our Cabernet Sauvignon grapes bright and pure varietal character. The unique weather caused the Corbett Vineyard to have lower yields. This relates to the wine having concentrated flavors with more spice and earthy notes.” Before destemming and crushing, the fruit was scrutinized cluster by cluster, allowing only the best fruit to pass through. After a two day cold soak, the must was inoculated with yeast and allowed to warm. Pumpovers were employed to gently attain the maximum extraction from the skins. Upon dryness the must was gently pressed, the wine inoculated with malo-lactic culture and put to barrel. The wine was barrel aged for 20 months prior to bottling.
Winemaker Notes
Bottled in July 2012, this shows wonderfully now and will continue to develop with proper cellaring for the next 6-8 years.
Food Pairing Notes
Grilled rib eye with cocoa chili rub, flank steak tacos with blue cheese salsa
